The personal cleanliness of all food employees is an absolute necessity in the operation of all food establishments. It is the responsibility of the Person In Charge (PIC) to make sure employees are effectively cleaning their hands, by routinely monitoring the employees' handwashing. Likewise, it is the responsibility of the food employee to keep their hands and exposed portions of their arms clean, their fingernails trimmed and clean, and to always wear clean outer clothing.
